I've just returned from an amazing,albeit frigid, visit to Bavaria. For me, most vacations are defined by their culinary experiences and this trip was no exception. After having been away from Germany for 10 years I needed to know if my memories of the delectable Kaiserschmarrn had become loftier than the reality. What I hadn't realized is just how many variations of this Austrian specialty there are. It is basically a pancake-type mixture made with eggs, flour, and milk that can be somewhat scrambled, cubed or even resemble a roll. Then it is served with sauteed plums, or apple compote and it is magnificent. While in the Spitzingsee ski area of Bavaria we hiked to a hutte in the middle of a pristine valley that was completely blanketed by snow. We stopped for lunch and had to try the famous Kaiserschmarrn offered there. This version was carmelized with spun golden threads of sugar covering the fluffy pillows of dough. Alongside were deliciously sweet "Zweitschge" deep purple and juicy. Mmmmm! We were not disappointed!
