Lissa Doumani and Hiro Sone, the dynamic couple behind Much Loved (and highly rated) Terra in St Helena Napa Valley - are celebrating the Fifth Spring of Ame in the St. Regis, San Francisco. New on their menu is non other than Orlando Pagan, one of the brighter stars on the San Francisco culinary scene. Don't let his bright smile and calm demeanor fool you- Orlando is keeping his voice heard in a kitchen of strong and talented personalities.
I believe this is an excellent step for Pagan, with the talents of both Lissa and Hiro to learn from- he is set up for success.
Our table- a weekday lunch held privately - showcased beautiful tastes, creative plating and the best that spring has to offer. Stand Outs included Broiled Sake Marinated Alaskan Black Cod with a Shrimp Dumpling (my photo does not include the Dumpling… as I am not a shellfish person) Crispy Suckling Pig with Yukon Gold Potato Puree, Forest Mushrooms and Nettle Sauce. - the menu was really quite glorious and I suggest highly taking the time to visit this elegant spot- and check out Orlando!
The wine pairing include many great tastes- but the stand out in my opinion was the Fort Ross Vineyard Pinot Noir from the Sonoma Coast- this family is South African - now in the US and their winery includes Pinotage a typically South African Varietal- not really grown in the US- a special taste.
