In the bottom of the pan, put in a carrot, a celery stalk, 3-4 cloves of garlic and a small onion, in chunks. Take care the broth doesn't cook away. The veggies will carmelize, and at the end you can mash the carrot and garlic, toss the rest, and this adds incredible richness and flavor to the gravy!
