Cranberry Kumquat Conserve with Dried Cherries

1 ½ cups kumquats

3 cups cranberries

¾ cup Port wine

2 ½ cups packed light brown sugar

1 ½ cups dried tart red cherries

¼ cup cider vinegar

1 teaspoon ground cinnamon

¼ teaspoon each salt, ground ginger and ground cloves

 

Using blender or food processor coarsely chop kumquats. Combine cranberries and wine in a large saucepan. Bring to a boil over high heat. Reduce heat to low; cover and simmer 8 to 10 mi kumquat2

Reduce heat to low; cover and simmer 8 to 10 minutes or until cranberry skins pop. Add chopped kumquats to the cranberries. Stir in brown sugar, dried cherries, vinegar, cinnamon, salt, ginger and cloves. Simmer uncovered over medium heat 30 to 35 minutes or until mixture reaches desired consistency. Cool. Spoon into jars or food storage containers. Store in refrigerator.
